Recipes

So Jeff has been staying with us this weekend (yay for Jeff, but sad that Jill and Hannah couldn't come) and asked me for recipes.

So here they are:

Buffalo Chicken Lasagna

12 Lasagna noodles (I used whole wheat)
2 lbs. ground chicken
3 cups Hunts Four Cheese Spaghetti Sauce
1 cup mild buffalo wing sauce (I used Frank's)
1 C. or less water (I didn't use any and it was fine)
15 oz nonfat ricotta cheese
1/2 C. egg substitute
9-10 slices 2% pepperjack cheese (which I couldn't find, so just used the regular)

Preheat the oven the 350 degrees. In a nonstick skillet, brown the ground chicken. When cooked, stir in the sauces and water. In a small bowl, combine ricotta cheese and egg substitute. Spray a 9x13 pan. Layer a cup of the sauce mix and arrange 4 noodles over the sauce. Layer with more sauce and the ricotta mixture. Repeat layers until you end with a layer of hte sauce mxiture. Cover and bake for 70 minutes. Uncover and place cheese slices on top and bake for another 15 minutes uncovered. Let stand for 10-15 minutes before serving. Serves 9.


Hot German Rice Salad

1 pkg. of hot dogs (8) cut into 8ths.
3 cups cooked rice (1 1/2 C. rice and 1 1/2 C. water)
1 C. diced celery
1 1/2 TBS flour
1/2 C. mayonnaise
2 tsp. mustard (prepared)
1/2 C. milk

Spray a 9x13 casserole dish. Place hot dogs, rice, celery, onion and water in dish.
Mix remaining ingredients.
Stir evenly into dish.
Bake at 350 degrees for 30 mins.


Aunt Teresa's Brisket

Pre-heat the oven to 200-250.
Place a large piece of foil in a casserole dish - it needs to be large enough to encase the entire brisket.
Put a dry rub over the entire brisket(top and bottom). We like Blues Hog.
Open the bottle of liquid smoke and pour entire bottle over brisket.
Cover the brisket with the foil - make a little air bubble at the top.
Let it bake for 6-8 hours.
