This n' that

Dinner the other night (was it just last night?) was a success. The mango-pinapple salsa and grilled turkey breasts were a hit!

I used this recipe from Cooking Light, substituting turkey for chicken. The boys (Tom and Rick) really seemed to like it and even went back for seconds. I served the turkey and salsa with long grain rice, potato salad, and Panera's tomato/basil bread. The carb selections were a bit much, but it was just that, a selection (unless you felt like putting all of the carbs on your plate).

Tonight I'm making turkey tacos with my "homemade" salsa. It is so good and easy! I used the cilantro (stalks and all) left over from the bundle I used yesterday, half a yellow onion, 1 can of Rotel and 1 can of diced tomatos. I used the blender to mix (and chop) it all and I'm done!

In addition to the tacos this evening, we will be eating fruit salad - a summer favorite!


I'm getting a bit depressed. All of these healthy meals and exercise and I'm still not losing weight. Can stress keep weight on a person? I may be a tad stressed about the job situation....
